White asparagus with two sauces (Espárragos blancos con dos salsas), a vegetable sauce and mayonnaise sauce can be served both as a tapa or as a starter.

White asparagus with two sauces - Espárragos blancos con dos salsas
Ingredients:
- 4 cooked, large white asparagus ice, cold. (Goes equally well preserved, they're small so take 8 pieces instead)
- 2-3 tablespoons mayonnaise
- 1 small tomato
- 1/2 green bell pepper
- 1/2 yellow onion
- 1 tablespoon chopped parsley
- 4 tablespoons olive oil
- 2 tablespoons white wine or sherry vinegar
- 1 clove garlic
- salt and pepper
Here's how:
- Chop the tomatoes, green peppers, garlic and onion finely
- Place in a bowl and pour the olive oil and vinegar and add in the chopped parsley.
- Stir together and season with salt and pepper.
- Serve the asparagus with a dollop of mayonnaise and vegetable sauce on the side.
