There is nothing like homemade mayonnaise, this can be used eg for Russian Salad - Ensalada Rusa .
As a curiosity may be mentioned that just the name Mahonesa comes from the town of Mahon in Minorca, and then the Swede and several other languages have inherited it.
Ingredients:
- 1 egg yolk
- 1.5 cup olive oil
- 1 tablespoon sherry or white wine vinegar
- salt and a little white pepper
Here's how:
- Add the egg yolk in a bowl, add the vinegar and season with salt and a little white pepper. Whisk vigorously, either by hand or with an electric mixer / in food processor.
- Add the olive oil is first added dropwise with constant whisking. When the mayonnaise begins to thicken, add the remaining oil in a steady stream, still under heavy whipping. If the mayonnaise curdle, so start over with a new egg yolks and add the cut mixture.
- Add a finely chopped clove of garlic in the mayonnaise (garlic mayonnaise), if desired.
