Fried anchovies - Boquerones fritos

Anchovy is common as tapa, as well as marinated in vinegar and fried well. The fish should be small, like sardines in a can of sardines. I guess you could get hold of them in a fish shop?

After an inquiry by Britt-Marie in Sundbyberg here are some recipes. Since I'm not sure if she means marinated or fried anchovies, then both. The first one was marinated anchovies , almost like our Swedish pickled herring. Welcome to the next recipe for fried anchovies - Boquerones fritos, ¡Qué aproveche! - Bon appetit!

Ingredients for 4 persons tapa:

  • 150-200 grams of fresh anchovies
  • 2 tbsp plain flour
  • Oil for frying
  • one milliliter salt
  • lemon wedges for garnish

Here's how:

  1. Clear the fish carefully by sharing it with the fingers around the stomach. The head can be left for those who wish to do so.
  2. Rinse the fillets and wipe dry with some kitchen paper.
  3. Mix flour and salt in a bowl and breading fish.
  4. Pour about 2 inch oil in a frying pan or other receptacle suitable for frying.
  5. When the oil is by hot and steaming, carefully lay the breaded anchovies, a little at a time and fry until they are golden brown and crispy. Put them fried fish on a paper towel to drain.
  6. Serve the fried anchovies are hot with a lemon wedge to.
